Behind the restaurant stands the team of Pescaderías Coruñesas, the legendary fishmongers who have been supplying Spain's top chefs and households with the freshest seafood for over a century. Their culinary empire already includes acclaimed restaurants such as O'Pazo, El Pescador, and Filandón - each an institution within its own right. Yet Desde 1911 is something else entirely.

Located in a beautifully restored warehouse in Madrid, it feels more like a temple than a restaurant - where simplicity is worship. There is no printed menu here. Instead, the offerings are handwritten daily, depending on what the boats bring in - a ritual that connects diners directly to the sea.

Where Less Is More

Too often these days, luxury dining has become synonymous with excess, be it in the music, the décor, or gimmicks designed for Instagram. Desde 1911 takes a different path altogether. From its understated yet supremely elegant interior - where Nordic clean lines, simplicity, and use of natural light set the tone, the senses are freed to focus on what really matters.

The restaurant is divided into three well-defined spaces: a lushly landscaped interior courtyard, light-filled and perfect for aperitifs and after-dinner drinks; the dining room with its direct view into the kitchen; and the Privado 1911 for intimate special occasions.

Any theatre here is solely in that open kitchen - where preparation becomes performance, though rooted in craft, not spectacle.

Pure Craftsmanship

Dining at Desde 1911 is a journey from sea to table - each plate a beautiful station where the story pauses, deepens, and reveals more of itself as you move along. And while I could describe every course, every revelation, I won't. Those fortunate enough to find themselves here deserve to discover its treasures unspoiled. You'll leave wondering why everyone else tries so hard, when the answer is simple: respect the ingredients, trust the craft, forget the rest.

In my opinion, Desde 1911 puts to shame many of the great seafood institutions of Milan, London, and New York. Not because it tries harder, but because it doesn't try at all - it simply is. The fish arrives, the kitchen works, the plate tells the truth. No translations needed, no explanations required. Just the unadorned confidence of people who know their craft and trust their product. This is what the world's capitals have forgotten: that excellence needs no embellishment.
